However, one evening shortly after I got married, this simple meal became a new memory in a new home. My husband had just returned from work, carrying some unripe plantains, fresh eggs, and ripe tomatoes.

As soon as he stepped in, he smiled and said, “I’m making dinner tonight.”

Out of curiosity, I asked what he planned to cook.

He replied confidently, “Pressed plantain. I want to make it since you’ve never eaten it before.”

We both laughed again. After that, I lovingly took over the kitchen. I peeled and sliced the plantains, pressed and fried them to golden perfection, and then made a delicious spicy egg and tomato sauce to go with it. The sweet aroma filled the air, and soon, our home was filled with warmth and love.

The next morning, he asked if I could make it again so he could take some to work. I smiled and said, “No wahala.”

Later that day, when he came home, he couldn’t stop smiling. His colleagues had enjoyed the meal so much that they wanted to know how his wife prepared it. As a result, that day became one of those beautiful memories that stay with you — a reminder that love can be expressed through the meals we make and the laughter we share.
